This study aimed to obtain appropriate technological parameters of acid-catalytic pyrolysis to synthesize resistant dextrin from rice starch. Hydrochloric acid has the highest catalytic efficiency of the four tested acids (acetic, citric, lactic, and hydrochloric). With HCl catalyst, pyrodextrins gained the content of indigestible fraction (IDF), water solubility, and whiteness %, %, and %, respectively. |
