The enzyme invertase is produced by Saccharomyces cerevisiae. It hydrolyzes sucrose into glucose and fructose, having a great utility industrially. With this it is necessary to know its main characteristics to be able to know how to optimize it. In this research the enzyme invertase was worked in two types of reactors very common in the industrial area, the batch reactor and the fixed bed reactor.
