INTRODUCTION The mud crab Scylla belongs to Portunidae, Decapoda, Crustacea class, Arthropoda, and includes 4 species (S. paramamosain; S. serrata; S. olivacea and S. tranquebarica) [1, 2]. The mud crab has expanded to aquaculture in recent years due to increasing demands and rising market value of this commodity [3, 4]. Soft-shell crab is a culinary term for crabs that have recently molted their old exoskeleton and are still soft [6]. Soft-shells are removed from the water as soon as they molt to prevent any hardening of their shell.
