The degree of unsaturation in the grape seed oil was over 86%, and the average concentration of total tocopherol in oil was around 454 mg/kg. The results indicate that grape seed oil could be an important source for production of an edible vegetable oil and lowering wine production costs. Key Words: grape seed, oil content, fatty acid composition, degree of unsaturation, total tocopherol content Baz› Üzüm Çekirdeklerinin Ya¤ ‹çeri¤i ve Ya¤ Kalite Özellikleri Özet: Sunulan araflt›rmada, 18 üzüm çeflidinden al›nan çekirdeklerin ya¤ içeri¤i ve ya¤ kalite özellikleri incelenmifltir. Sonuçlar çekirdeklerin ya¤ içeriklerinin %11,6 ile 19,6 aras›nda de¤iflti¤ini göstermifltir. Üzüm çekirdekleri, oranlar› s›ras›yla %17,8 -26,5 ve %60,1-70,1 aras›nda de¤iflen oleik ve linoleik asitlerce çekirde¤i ya¤›n›n doymam›fll›k derecesi %86’n›n üzerindedir, ve bu ya¤da ortalama toplam tokoferol (Vitamin E) içeri¤i 454 mg/kg dolay›ndad›r. Bu sonuçlar, üzüm çekirdeklerindeki ya¤›n yenilebilir bitkisel ya¤ olarak kullan›lmas› ve flarap üretim masraflar›n›n düflürülmesi bak›m›ndan önemli bir kaynak olabilece¤ini göstermifltir.
