The addition of proteolytic enzymes caused the prevention of the inhibition. Ennahar et al. 1996 found out that Lactobacillus plantarum WHE 92 produce a bacteriocin identical to pediocin AcH from P. acidilactici H though pediocin AcH was produced more effectively in L. plantarum WHE 92 in the pH range of 5.0 to 6.0 as compared to P. acidilactici H.
